Matt Moran – Talks food, toys and life

Last month we caught up with Sydneysider restaurateur, chef and author, Matt Moran. Keen to know more about his busy life and travels we recruited him as this month’s D’Marge Man About Town and Guest Editor. Matt talks to us about motorcycles, his style and food.

When we saw you last you had just stepped off a plane, wearing all black, some cool Jimmy Choo sneakers and a fresh Rolex. Would you say you’re an active participant in men’s fashion?
I have an appreciation for it absolutely, but I’m not really one to follow trends. I just know what I like and what I’m into. I’ve always been like that.

Do you have any rules when it comes your style, sneakers and watches?
Not really, but the one thing I’d say is that because I’m so busy and my lifestyle is quite hectic, I like to be comfortable! And certain brands just get the right blend of style and comfort.

What about boy’s toys. We know you have an interest in motorcycles. What’s is it about motorcycles that you love?
I’ve loved them for as long as I can remember! I grew up on a farm so I started riding dirt bikes as a kid and my passion just grew from there. It’s just the most exhilarating, freeing feeling – nothing compares.

What bikes do you currently own? 
I love a Ducati – I’ve owned more than ten over the years, but at the moment I have a 2015 Diavel Carbon Red and a Ducati 1199 Panigale S Tricolore. I also own a Harley Davidson.

Recently we had the pleasure of sitting in the private kitchen space at Aria in Sydney, can you tell us a little more about why you put a dining area in the middle of the kitchen?
People have a real curiosity about food and it’s great to see. They’re becoming increasingly interested in what they eat, where it’s come from, how sustainable it is and when in a restaurant, how it’s cooked. It was seeing this interest that led to our decision to open a kitchen table with an unobstructed view of the kitchen.

I’m no culinary expert, but what are some ways that our readers can develop and learn to love food and cooking?
The Australian food industry has grown incredibly from when I first started cooking – everything’s more accessible now. They can read food publications and watch television shows about quality produce and cooking but most importantly, I think the farmers markets are a great place to start. Actually speaking to the people that grow your food and buying it from them first-hand is not only inspiring, the ingredients are fresher and just taste better!

We often recommend our readers try cooking something for their dates. What are some simple dishes that even novices can whip up to impress a special someone?
The main thing is the think of dishes where you can do most of it beforehand and not have to spend a lot of time in the kitchen on the night – start with something like oysters, a roast and then a tart you can make prior so you just need to put it in the oven.

Matt, you’re what we call a man’s man here at D’Marge. In your opinion, what does it take to be a well respected bloke amongst your peers and the public?
I think just being a decent guy and having integrity in what you do. Integrity goes a long way.

How do you get away from all the hype and buzz around TV, work and restaurants? Where’s your escape?
I love my home and obviously enjoy spending time there with the family. I also have a farm I love to visit when I can.

What are some of your don’t leave home without travel essentials?
My phone charger! I’d be lost without it! I also like a good set of headphones.

Who’s the most interesting person you’ve ever met (and why?)
That’s a tough one to answer! My work brings me into contact with all sorts of people from all types of backgrounds and there are so many that have inspired me along the way – it’s hard to single just one out!

Sound advice for the aspiring young men reading this article?
Work hard and live your life well. Know what you want and go for it.
